The NVH issues were addressed in the 2020 Civics (at least in the refresh of the hatchbacks). Honda added more sound deadening and vibration control. I can make the Miata work for another year. Also, it looks like the MK8 will be a MY2020 for the US.

I think I’d be plenty happy with a 2018+ (MK 7.5) GTI, but resale is silly and a new one may make more sense.

Still haven't warmed up to the looks of the mk8 personally. The mk7 GTI is pretty much the perfect hatchback imo. I think it's one of those cars that pretty much anyone would be happy in even if they dont admit it.

I'm not a fan of the Mk8's looks, but by all indications the driving dynamics should be a lot better than the Mk7. If I could magically turn the Mazdaspeed and the CX-5 into a Mk8 and a pile of cash I'd pull the trigger on that immediately

Agreed. I'd prefer a slightly depreciated late MK7, but I'm not going to pay near new MK8 money for a 30k-mile, 3yo MK7. We'll see.

Especially with VAG reliability. They seem to basically be cars you dump after 60,000 miles.

Having said that, most everyone I know with the current gen Civic has said the reliability has been ... not Honda-like.

Maybe that will change with the shift to Germany for the GTIs and Rs?

I doubt it, it doesn't seem to be an issue with assembly quality but rather component quality.
