Yeah, I feel you. If I were going to get a truck, I'd want a truck, not a Honda Pilot with a bed. In fact, there's literally no question that I can think of where the answer is "Honda Pilot," with or without a bed.
If I were in your position, I'd wait to see what the Ranger was like, just because I suspect it will be as good or better than the Canyon. I actually think the rumored JL pickup might be even better for you, but who knows when those will be available.
